It’s summer so naturally I am daydreaming all day about being off on an Instagram-worthy vacation and most times my mind ends up in the Mediterranean😎. Although nothing could compare to the real thing, I won’t deny that eating this salad and pretending to be on the coast of Dubrovnik certainly helps!
This salad is super quick and easy to make and very filling (thanks to the feta cheese!) but also light enough that it won’t make you feel groggy afterwards. FYI, the recipe works best if you will be sharing or are cool with having the same meal twice within 3 days.
1/2 cup chopped cherry tomatoes
1/2 medium cucumber, peeled
1/2 green bell pepper
1 medium spring onion
1/3 cup feta cheese
6 kalamata olives (full disclosure, I replace this with black olives. I hate kalamta 🤢)
1 tsp dried oregano
2 tbsp extra virgin olive oil
Slice the pepper into medium strips and quarter the tomatoes. Chop the spring onion and olives. Peel the cucumber and dice roughly. Combine all ingredients in a bowl and add the crumbled or diced feta, dried oregano and drizzle with olive oil. Mix well and enjoy!
